Lemon Granita

- 100 g sugar
- 6 untreated lemons
- 40 ml apple juice
- mint leaves (optional)

Add the sugar to 200 ml water in a pot and simmer gently for about 5 minutes, then remove from heat.

Halve the lemons and squeeze out the juice. Remove the skin from four halves and keep them refrigerated. From another half cut off some zest into fine strips for garnish; grate the zest from yet another half. Stir the lemon juice with the grated zest and apple juice into the syrup and let cool. Pour the liquid into a shallow metal bowl and freeze in the freezer for at least 4 hours, stirring every 30 minutes with a fork.

Scrape the frozen granita with a sharp-edged spoon. Fill the chilled lemon halves and garnish immediately with lemon zest and mint.
