Zabaione with Peach

Ingredients

  • 4 peaches
  • 1 tbsp Lemon Juice
  • 4 egg yolks
  • 1 Tbsp vanilla sugar
  • 40 g sugar
  • 2 tbsp pistachio syrup (colorless)
  • 100 ml dry white wine
  • meringue crumbs (for garnish)

Instructions

    Peel the peaches, blanch them, cool, remove skins and pits. Dice the flesh into small cubes, mix with lemon juice, and fill four dessert cups or glasses leaving some pieces for garnish.

    For the zabaione whisk the egg yolks with vanilla sugar and sugar over a hot but not boiling water bath at moderate temperature until lightly frothy. Add the pistachio syrup and white wine, continue whisking until the zabaione has a creamy, airy consistency.

    Pour the zabaione over the peaches in the glasses and garnish with remaining peach pieces and crumbled meringue crumbs before serving.
