Lemon Granita

Ingredients
- 5 lemons (organic)
- 150 ml light grape juice (organic)
- 600 ml dry sparkling wine (organic)
- liquid stevia (organic, to taste)
- small mint (organic, for garnish)

Halve the lemons and squeeze them. Remove the skins from four nice halves and store in the refrigerator. From another half cut off a bit of zest and slice into fine strips for garnish.

Pour the lemon juice into a pan and reduce to about 3/4 of its volume. Pour the grape juice into a shallow metal bowl. Add the reduced lemon juice and sparkling wine, stirring well. Sweeten with a pinch of stevia if desired; use sparingly so it does not become too sweet. Cover the metal bowl with plastic wrap and place in the freezer for about 3 hours.

Scrape the frozen granita with a sharp-edged spoon. Fill the chilled lemon halves and garnish immediately with lemon zest and mint.
