Lemon Chicken

Ingredients

  • 1 whole chicken (approx. 1.4 kg)
  • Salt
  • black pepper (freshly ground)
  • 1 tsp thyme leaves
  • 0.5 tsp Fennel seeds
  • 250 ml poultry stock
  • 2 tbsp oil
  • 2 lemons

Instructions

    Wash and pat the chicken dry.

    Heat one lemon, grate 1 tsp of zest. Mix lemon zest, 1 tbsp oil, a pinch of salt, pepper, thyme, and fennel; rub this mixture all over the chicken.

    Tie the legs together with kitchen twine and cross the wings on the back.

    Slice the remaining lemon into rounds.

    Place the prepared chicken breast-side up in a pan greased with leftover oil. Roast in a preheated oven at 200°C for about 1 hour, adding lemon slices. Periodically pour in stock and baste the chicken with the roasting juices.

    Serve the roasted chicken with lemon slices and optional fennel vegetables.
