Ingredients

  • 400 g sweet potatoes
  • 1 spinach
  • 2 chicken breast fillets
  • 1 tsp rosemary sprig
  • 150 ml dry red wine
  • 4 tbsp olive oil
  • Salt
  • Pepper

Instructions

    Peel, wash potatoes, cook in salted water for about 25 minutes, drain, let cool slightly, then cut lengthwise into strips. Wash, trim, and spin-dry spinach.

    Season chicken with salt and pepper, sear each side in 2 tbsp olive oil for ~5 min, finish by adding rosemary for 1-2 min; remove and keep warm. Deglaze the pan with red wine, reduce to half, season with salt and pepper.

    Heat olive oil, fry sweet potatoes while turning occasionally for 5-7 minutes; season with salt and pepper, then add spinach and cook briefly.

    Plate chicken breast with sauce, roasted sweet potatoes, and spinach and serve.
