Lemon Cake

Ingredients

  • 250 g chocolate cookie
  • 120 g butter
  • 8 egg yolks
  • 800 ml sweetened condensed milk
  • 5 untreated limes (or about 20 smaller key limes)
  • 1 tbsp freshly grated ginger
  • 250 ml Whipping Cream
  • 2 tbsp sugar
  • 50 g toasted coconut flakes

Instructions

    Crush the cookies and put them in a bowl. Melt the butter in a small pot and let it cool slightly. Add to the crumbs, mix well, and press the mixture onto the bottom and sides of a springform pan lined with parchment paper; press firmly. Refrigerate.

    Preheat the oven to 180°C fan.

    Beat the egg yolks until creamy. Fold in the condensed milk and stir until smooth. Grate the zest of two limes and squeeze all the juice. Mix half the zest with the juice and ginger into the cream. Bake for about 40 minutes. Remove and let cool completely.

    Whip the cream with sugar until stiff.

    Release the cake from the pan and spread the whipped cream over it. Sprinkle with coconut flakes and remaining lime zest before serving.
