Lemon Quark

Ingredients

  • 1 lemon
  • 300 g low‑fat quark
  • 400 g yogurt (1.5% fat)
  • 3 tbsp honey
  • 6 stems lemon balm

Instructions

  1. 1.

    Peel the lemon thoroughly with a sharp knife, remove seeds, dice the flesh into small cubes while catching the juice.

  2. 2.

    Mix lemon juice with quark, yogurt and honey. Fold in the diced fruit. Wash and dry the lemon balm leaves; pinch off leaves from two stems, finely chop and stir into the quark mixture.

  3. 3.

    Fill four bowls with the lemon quark and garnish with remaining lemon balm before serving.
