Ingredients

  • 125 g long grain rice
  • Salt
  • 500 g green beans
  • 2 bunch spring onions
  • 1 small red bell pepper
  • 2 tbsp oil
  • 2 tbsp pine nuts
  • 1 lemon (unwashed)
  • white pepper from the mill
  • 30 g Butter
  • 2 tbsp currants
  • lemon slice (for garnish)
  • smooth parsley (for garnish)

Instructions

    Cook rice in salted water according to instructions. Drain and set aside. Wash, trim beans and cook in salted water for 12-15 minutes.

    Trim spring onions, wash and cut into 5-6 cm pieces. Quarter the bell pepper, remove white seeds and ribs. Rinse pepper and slice into thin strips.

    Heat oil and toast pine nuts until golden brown. Transfer pine nuts to a plate. Add pepper and spring onions to the pan and sauté briefly. Wash lemon, zest it, then squeeze juice.

    Add beans and lemon juice together, heat briefly. Season with salt and pepper. Fry rice in butter, add currants. Plate beans and fried rice with lemon slices, sprinkle pine nuts on top and garnish with parsley.
