Leek with Peanut Sauce

Leek with peanut sauce and rice: provides a quarter of the daily calcium requirement, strengthening bones and teeth and essential for blood clotting.
Ingredients
- 100 g basmati rice
- Salt
- 500 g leek (2 stalks)
- 1 clove garlic
- 60 g roasted salted peanuts
- 1 tsp chili flakes
- 20 g cane sugar
Instructions

Bring 250 ml water to a boil with the Basmati rice and salt, cover and simmer over low heat for 10–12 minutes.

Meanwhile, cut the leek lengthwise in half, wash and trim. Cut each half crosswise into sections. Peel the garlic cloves.

Boil 100 ml water, add salt, and steam the leek pieces covered over medium heat for about 10 minutes.

For the sauce, bring 150 ml water, garlic, peanuts, chili flakes and sugar to a boil. Simmer covered over low heat for about 3 minutes.

Blend the sauce and season with salt. Plate the leeks with peanut sauce and rice.
