Leek Quiche with Lobster Meat

Ingredients
- 200 g Flour
- 40 g grated Parmesan
- 1 egg
- 80 g Butter
- 1 pinch salt
- soft butter (for the tart pan)
- 400 g lobster meat
- 2 stalks leeks
- 1 tbsp butter
- 2 tbsp breadcrumbs
- 100 g grated alpine cheese
- 4 eggs
- 100 g crème fraîche
- chili strands
- 200 ml whipping cream
- Salt
- Pepper
Instructions

Knead the flour with parmesan, egg and butter into a smooth dough. If needed add a little cold water or more flour. Wrap in cling film and chill for about 30 minutes.

Meanwhile, flake the lobster meat with a fork. Rinse thyme, shake dry and pluck leaves. Cut leeks lengthwise, wash, trim and slice into strips. Sauté in butter in a hot pan for 2-3 minutes until colorless. Remove from heat and let cool slightly.

Preheat oven to 180°C fan. Butter the tart pan.

Roll out dough and line the pan. Prick the base several times with a fork and sprinkle breadcrumbs on top. Spread lobster meat and leeks over the base.

Whisk cheese, eggs, crème fraîche, thyme, chili and cream together. Season well with salt and pepper and pour over the filling. Bake in oven for about 50 minutes until golden brown.

Remove from oven and serve warm or cooled.
