Ingredients
- 150 g spelt whole wheat flour
- 100 g butter
- 5 eggs
- Salt
- 750 g leeks (3 stalks)
- 100 g Gruyère cheese (block)
- 100 ml milk (3.5% fat)
- 300 ml heavy cream
- 200 g turkey ham
- Pepper
- nutmeg
Instructions

Knead flour, butter, 1 egg and 1 tsp salt quickly into a smooth shortcrust dough and cover for about 30 minutes in the fridge.

Meanwhile wash, trim and slice leeks thinly. Grate cheese. Dice turkey ham. Roll out the dough between cling film and place it in the pan, forming a rim.

Mix remaining eggs with leeks, cheese, ham, milk and cream. Season with salt, pepper and freshly grated nutmeg. Pour the mixture into the crust and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 45–50 minutes until golden brown.
