Leek Apple Gratin with Noord Hollander

Ingredients
- 800 g waxy potatoes
- 3 apples
- 4 Spring Onions
- 100 g Parma ham
- 150 g Noord Hollander Premium Gouda (creamy mild)
- 1 Garlic clove
- 300 ml milk
- Salt
- ground pepper
- 150 g crème fraîche (= 1 container)
- 20 ml pear juice concentrate

Peel, wash and slice the potatoes. Wash the apples, quarter them, remove cores and cut into strips. Trim, wash and slice the spring onions into rings.

Slice the ham into strips. Grate the cheese. Peel and crush the garlic.

Boil the milk with the garlic, season with salt and pepper, add the potatoes and simmer covered for about 15 minutes. Stir in the crème fraîche. Mix the potatoes, apples, ham, spring onions and half of the cheese, then transfer to a gratin dish (about 20x25 cm) or four individual ramekins. Sprinkle the remaining cheese on top and bake in a preheated oven at 180 °C (gas: level 3, fan 160 °C) for about 30–40 minutes. Drizzle with pear juice concentrate before serving.
