Roasted Goose Drumsticks with Pears and Red Cabbage

Ingredients

  • 4 goose drumsticks (≈400 g each)
  • 1 tbsp grated orange zest
  • 1 tsp mixed pepper (crushed in mortar)
  • Salt
  • 2 tbsp oil
  • 250 g onions
  • 30 g Butter
  • 1 jar red cabbage (680 g wet weight)
  • 4 tbsp white wine
  • 250 ml vegetable broth
  • 3 pears (≈200 g each)
  • 40 g raisins
  • pepper (ground)
  • 2 tsp light sauce thickener

Instructions

    Wash the goose drumsticks, pat dry and score the skin side crosswise with a sharp knife. Rub the drumsticks with orange zest, pepper mixture and salt.

    Heat oil in a roasting pan and sear the drumsticks skin-side down for 3-4 minutes, then flip and roast in a preheated oven at 200°C on the second rack for about 45-50 minutes, basting regularly with the drippings.

    Peel and roughly cube onions; sauté until translucent. Add red cabbage, wine and broth. Wash one pear, grate unpeeled, mix with raisins and add to the cabbage mixture. Season with salt and pepper and simmer covered for ~20 minutes.

    Reduce oven temperature to 180°C and roast drumsticks another 15 minutes, basting again.

    Peel remaining pears, cut into wedges, deseed, add to the cabbage and cook together for 6-8 minutes. Salt, pepper and thicken with sauce thickener.

    Plate goose drumsticks with pear-red cabbage and serve alongside mashed potatoes.
