Leek and Salmon Soup

Ingredients
- 2 stalks leeks
- 400 g waxy potatoes
- 2 tbsp butter
- nutmeg
- Salt
- Pepper (freshly ground)
- 800 ml vegetable broth
- 400 g Salmon fillet
- 1 tbsp finely chopped dill
- 100 ml heavy cream
- Lemon juice
- Chopped parsley for garnish

Clean, wash and slice the leeks into rings. Peel and dice the potatoes. Sauté both in hot butter in a pot, seasoning with nutmeg, salt, and pepper. Add the broth, bring to a boil, then simmer gently for about 20 minutes. Wash the salmon fillet, pat dry, and cut into strips.

Add dill and cream to the soup, bring to a boil, add the salmon, and cook only another 4-5 minutes. Season with salt, pepper, and lemon juice.
