Ingredients

  • 600 g waxy potatoes
  • 1 Zucchini
  • 2 leeks
  • 1 Garlic clove
  • 5 tbsp sunflower oil
  • 800 ml chicken broth
  • Salt
  • ground pepper
  • 2 tbsp freshly chopped parsley
  • nutmeg
  • a handful dried marjoram
  • 300 g coarse pork sausage
  • dried marjoram for garnish

Instructions

    Peel and roughly dice the potatoes and zucchini. Wash, trim, and roughly dice the leeks. Peel and finely chop the garlic. Sauté the zucchini with leeks and garlic in 1 tbsp hot oil, deglaze with broth, then add the potatoes. Season with salt and pepper, cover, and simmer gently for about 30 minutes, stirring occasionally. Remove half of the vegetables with a slotted spoon and puree the rest of the soup finely.

    Add the sliced sausage and parsley to the soup and let it infuse for about 5 minutes. Adjust seasoning with salt, pepper, and nutmeg. For the pesto, break off marjoram leaves and blend with remaining oil until smooth. Pour over the soup and serve garnished with dried marjoram.
