Leek and Pepper Tart with Goat Cheese

Ingredients

  • 400 g puff pastry
  • 4 tbsp olive oil
  • 2 red bell pepper halves
  • 2 green bell pepper halves
  • 2 yellow bell pepper halves
  • 2 Garlic cloves
  • 1 leek stalk
  • Salt
  • black pepper (freshly ground)
  • 1 tsp Dried oregano
  • 200 g goat cheese (roll)
  • 6 thyme sprigs

Instructions

    Roll out the puff pastry and line a baking sheet with it, brushing the surface with olive oil. Prick the dough several times with a fork. Preheat the oven to 200°C fan.

    Wash all bell peppers, halve them, remove seeds and white membranes, and dice the flesh into small cubes. Peel and finely chop the garlic. Wash, trim, and slice the leek into rings. Combine the peppers, garlic, leeks, and remaining olive oil in a bowl. Season with salt, pepper, and oregano.

    Spread the vegetables evenly over the pastry, leaving a 1 cm border. Slice the goat cheese into rounds and place them on top of the veggies. Sprinkle thyme sprigs over the dish. Bake in the preheated oven for about 30 minutes until golden brown. Serve hot or warm, cut into pieces.
