Ingredients

  • 4 figs
  • 250 ml port wine
  • 1 untreated orange
  • 1 cinnamon stick
  • 1 star anise
  • 75 g sugar
  • 100 g dark chocolate
  • 4 eggs
  • 100 g sugar
  • 1 packet Bourbon vanilla sugar
  • 2 tsp Lebkuchengewürz
  • 30 ml orange liqueur
  • 40 g flour
  • 1 tsp Baking powder
  • powdered sugar

Instructions

    Wash and quarter the figs for the port wine mixture. Peel the orange thinly, juice it. Combine port wine, orange juice, cinnamon stick, star anise, and sugar in a pot and bring to a boil. Add the figs and boil once more. Dissolve starch with cold water and stir into the figs while cooking. Boil again, then let cool. Remove zest and spices.

    Melt chocolate in a double boiler. Separate eggs. Beat egg whites until stiff peaks form. Whisk yolks, sugar, vanilla sugar, Lebkuchengewürz, and orange liqueur for at least 8 minutes. Add melted chocolate and mix.

    Sift flour and baking powder together. Fold beaten egg whites into the chocolate mixture. Pour the batter over the milk mixture, then gently fold in. Divide the soufflé batter into four greased and floured ramekins and bake immediately in a preheated oven at 175°C (or gas mark 3) for about 20 minutes.

    Serve immediately on a dessert plate with the port wine figs, dusted with powdered sugar. Optionally decorate with chocolate shavings and serve with lightly whipped cream.
