Ingredients

  • 450 g spelt whole‑grain flour
  • 100 g Ground Almonds
  • 1 tsp cinnamon powder
  • 2 tsp gingerbread spice mix
  • 1 tsp potassium carbonate
  • 1 Organic Orange
  • 200 g butter
  • 2 Eggs
  • 250 g honey

Instructions

    Mix flour, almonds, spices and potassium carbonate in a bowl. Rinse the orange hot, pat dry and grate its zest finely. Halve the orange and squeeze out the juice.

    Add 1 tsp orange zest and 2 tbsp orange juice to the flour mixture. Knead with butter, eggs and honey into a smooth dough. Wrap in cling film and refrigerate overnight.

    Line a baking sheet with parchment paper. Roll out the dough and cut out desired shapes, placing them on the sheet. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 15 minutes. Remove and cool on a wire rack.
