Ingredients

  • 200 g honey
  • 50 g Brown sugar
  • 75 g butter
  • 1 egg
  • 1 tbsp cocoa powder
  • 1 tsp ground cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp cloves powder
  • 2 tsp Baking soda
  • 2 tbsp rum
  • 300 g flour
  • 100 g chopped almonds
  • 50 g finely chopped lemon zest
  • 50 g finely chopped orange zest
  • 50 round wafers
  • 125 g powdered sugar
  • 2 tbsp lemon juice
  • 25 decorative cherries
  • 50 g almond sticks

Instructions

    Heat honey, brown sugar and butter in a saucepan until the sugar dissolves; let cool. Beat in egg, cocoa and spices. Whisk baking soda with rum until smooth and add to the mixture. Fold in flour, chopped almonds, lemon zest and orange zest. Knead into a firm dough. Dust work surface with flour.

    Place wafers on parchment‑lined tray. Spoon dough onto each wafer and flatten with a spoon. Bake at 150°C for about 25–30 minutes until golden. Cool completely. Mix powdered sugar with lemon juice to make a thin glaze. Brush gingerbread with glaze, top each with half a cherry and decorate with almond sticks.
