Dou-Sha

Ingredients
- 500 g flour
- 20 g yeast (0.5 cube)
- 400 g sweet bean paste (Asian store)

Sift flour into a bowl. Dissolve yeast in 0.25 l lukewarm water and add to the flour. Knead thoroughly into a smooth dough. Cover with a cloth and let rise for 30 minutes. Punch down the dough, then on a floured surface roll it into a cylinder about 3 cm thick. Divide into roughly 20 pieces and roll each into round discs about 10 cm in diameter. Place one tablespoon of bean paste in the center of each disc. Bring the edges up and fold over the filling, tucking the ends together. Twist slightly and press firmly.

In a pot with a diameter similar to that of a bamboo steamer, bring water to a boil. Line the bamboo steamer with a damp cloth and place the dough pockets in portions, spacing them about 3 cm apart. Set the steamer over the pot, cover, and steam for about 12 minutes.
