Ingredients
- 300 g mixed leafy greens of choice (e.g., Lollo Rosso, Lollo Verde, Frisee, Rucola, dandelion, lamb's lettuce… )
- 3 tbsp red wine vinegar
- 2 tbsp balsamic vinegar
- 1 tsp Mustard
- 3 tbsp orange juice
- 6 tbsp Olive oil
- Salt
- Pepper (freshly ground)
- 8 slices goat soft cheese
- oil (for the tray)
Instructions

Clean, wash, dry, and tear the greens into bite‑size pieces.

Whisk together the vinegar, orange juice, mustard, salt, pepper, and olive oil until emulsified; taste and adjust seasoning.
