Cauliflower Salad with Egg-Ham Sauce

Cauliflower salad with egg-ham sauce by Spoonsparrow: One serving delivers only 8 grams of carbohydrates but 23 grams of satiating protein!

Ingredients

  • 1 kg Cauliflower
  • Salt
  • 1 Organic lemon
  • 4 tbsp sprouting oil
  • Salt
  • Pepper (freshly ground)
  • 3 hard-boiled eggs
  • 200 g raw ham
  • 3 tbsp finely chopped parsley

Instructions

    Wash, trim and cut the cauliflower into even florets. Bring salted water to a boil in a wide pot. Cook the cauliflower in boiling salted water for about 7 minutes until al dente, drain, briefly rinse with cold water and let it dry well.

    Halve the lemon, squeeze out the juice and whisk the lemon juice with oil, salt and pepper; mix into the cauliflower.

    Peel the eggs and dice them finely. Dice the ham into small cubes as well. Arrange the slightly warm cauliflower on a plate and sprinkle with egg, ham and parsley.
