Ingredients

  • 150 g quinoa
  • Salt
  • 2 Grapefruits
  • 7 g Dijon mustard (1 tsp)
  • 2 tsp Honey
  • 2 tbsp olive oil
  • Pepper
  • 2 boxes watercress
  • 1 Avocado
  • 1 bunch spring onions

Instructions

    Cook quinoa in twice the amount of boiling salted water for about 20 minutes, drain and let cool for 10 minutes.

    Meanwhile, peel grapefruits with a knife so that the white pith is removed as well.

    Cut grapefruit segments between the membranes, catching the dripped juice. Mix juice with mustard, honey, and oil; season with salt and pepper.

    Trim watercress from the bed. Clean spring onions, rinse, and cut into thin rings. Halve avocado, remove pit, scoop flesh from skin, and slice.

    Combine all prepared salad ingredients with dressing and serve on plates.
