Ingredients

  • 500 g Greek yogurt (min. 3.8% fat)
  • 8 ripe apricots
  • 150 g chopped nuts (as desired)
  • 6 tbsp honey
  • 1 orange (juiced)

    Briefly blanch the apricots, peel, halve, seed and dice them; heat the orange juice in a saucepan, add the apricot pieces and 3-4 tbsp honey, let simmer slightly, set aside to cool. Toast the nuts in a dry pan until lightly browned, mix in the remaining honey, and set aside.

    Spread half of the yogurt over four glasses, top with one-third of the nuts, then two-thirds of the apricots, followed by another third of yogurt, then a further third of nuts, more yogurt, nuts again, and finish with a garnish of apricot pieces. Serve chilled as dessert or breakfast.
