Lavender Ice Cream

Ingredients

  • 5 stalks lavender
  • 200 ml whipped cream
  • 300 g yogurt
  • 200 g quark
  • 125 g sugar
  • lavender oil
  • 1 tbsp Lemon Juice

Instructions

    Wash the lavender, dry it and shake off excess water. Add to a pot with the whipped cream and bring to a boil. Remove from heat and let cool overnight in the refrigerator.

    Mix the yogurt with the quark, sugar, lavender oil and lemon juice. Strain the cream, whip it stiffly and fold into the yogurt mixture. Pour the mixture into a shallow dish and place in the freezer for 3–4 hours, stirring every half hour.

    Use an ice cream scoop to form balls from the mixture and serve them on small bowls. Drizzle with lavender honey if desired and garnish with lavender flowers.
