Ingredients
- 200 g honeydew flesh
- 2 tbsp lemon juice
- 500 g low‑fat quark
- 3 tbsp liquid honey
- vanilla aroma
- 150 ml whipping cream
- 1 Egg white
- mint (for setting)
- vanilla pods (for garnish)
Instructions

Dice the honeydew flesh into small cubes and blend with lemon juice in a blender until smooth.

Whisk the quark with honey and vanilla aroma until creamy, fold in the fruit puree, then whip the cream and egg white separately to stiff peaks and fold them in.

Pour the mixture into a shallow dish and place it in the freezer compartment for 4 hours.

Stir every 30 minutes during freezing.

Use an ice‑cream scoop to cut spheres, arrange on small bowls, and serve garnished with mint leaves and a slice of vanilla pod.
