Quark-Eis Cake

Ingredients
- 125 g mixed candied fruit (finely diced)
- 40 ml orange liqueur
- 30 g pistachio nuts
- 30 g pine nuts
- 30 g blanched almond kernels
- 50 g dark chocolate
- 200 g sugar
- 2 packets vanilla sugar
- 4 sheets white gelatin
- 750 g ricotta
- 250 ml Whipping Cream
- candied fruit (for garnish)
Instructions

Soak the candied fruit in orange liqueur and let it absorb. Roughly chop pistachios, pine nuts, almonds, and chocolate. Reduce sugar, vanilla sugar with 7 tbsp water into a syrupy consistency in a saucepan.

Soak gelatin in cold water.

Whisk ricotta with the syrup. Dissolve gelatin in a small pot over low heat until liquid; stir in 3 tbsp of ricotta, then mix well with remaining ricotta. Fold candied fruit with soaking liquid, chopped nuts and chocolate into the ricotta mixture.

Rinse a bowl of about 1.5 L with cold water. Pour the mixture into the mold, smooth the surface, cover with cling film and chill in the refrigerator for about 3 hours until set.

Whip cream to stiff peaks; pipe star‑shaped decorations onto the cake with a pastry bag and garnish with candied fruit.
