Large Shrimp with Anchovy Cream

Ingredients
- 750 g large shrimp (pre-shell and deveined)
- 0.5 bunch basil (finely chopped)
- 2 tbsp chili oil
- a splash white wine
- 2 egg yolks
- 180 ml olive oil
- 1 Garlic clove
- 2 anchovies (finely chopped)
- Lemon juice
- 4 tbsp parmesan cheese (freshly grated)
- Salt
- Cayenne pepper

For the mayonnaise, whisk egg yolks and gradually add oil while constantly stirring, first dropwise then in a thin stream. Stir in anchovies, parmesan, and pressed garlic. Season with lemon juice, salt, and cayenne pepper.

Wash and pat dry the shrimp. Briefly sauté in hot chili oil, then deglaze with a little wine and let cook for about 2–3 minutes. Finally fold in basil and season with salt. Serve with the anchovy mayonnaise.
