Large Prawns in Salt and Wine

- 28 large prawns (ready to cook)
- 4 cloves garlic
- 1 bunch parsley
- 2 lemons
- 2 kg coarse sea salt

Preheat the oven to 200°C.

Wash the prawns and pat them dry with a towel.

Peel the garlic and roughly chop it. Wash the parsley, shake off excess water, roughly chop it, and combine with the garlic in a mortar; crush together. Place the prawns with the parsley-garlic mixture in a bowl and mix well. Rinse the lemons hot, pat them dry, grate the zest, and cut into 24 thin slices. Sprinkle 1 kg of salt onto a baking sheet, arrange the lemon slices on top, and place one prawn on each slice. Cover everything with the remaining salt and bake in the oven for about 10 minutes.

Remove from the oven, lift the prawns out of the salt crust, and serve on small preheated plates with white bread.
