Ingredients
- 2 Eggs
- 60 g Coconut blossom sugar
- 1 vanilla pod (vanilla bean)
- 2 tsp grated lemon zest
- 50 g butter
- 350 g spelt flour (type 1050)
- Pinch of salt
- 750 g clarified butter (for frying)
- 2 tbsp powdered sugar (xylitol)

Beat the eggs with coconut blossom sugar and vanilla bean until very fluffy. Stir in the grated lemon zest. Melt the butter. Mix the flour with the pinch of salt, sift onto a work surface, and create a well in the center.

Pour the melted, slightly cooled butter into the well, then add the fluffy egg mixture; knead everything into a smooth dough.
