Chocolate Cookies

Ingredients
- 3 tbsp Flour
- 200 g ground almonds
- 2 tsp cocoa powder
- 4 egg whites
- 250 g very fine sugar
- 150 g dark chocolate (70% cacao)
- 80 g whipping cream
- 20 g butter
- cocoa powder (for dusting)
- 200 g powdered sugar
- 2 tbsp lemon juice
- food coloring (optional)
- colored sprinkles
- sugar pearls

Preheat the oven to 130°C.

In a bowl mix flour, almonds and cocoa. Beat egg whites into stiff peaks. Gradually add sugar while beating until a glossy, firm mixture forms. Gently fold in the almond-flour blend. Fill a freezer bag or piping bag with a large round tip and pipe dough onto parchment-lined tray in 2.5 cm rounds. Bake for about 40 minutes, leaving the oven door slightly ajar. Remove from oven, take off tray and let cool.

For the filling, chop chocolate into small pieces and melt over a double boiler. Whip cream to stiff peaks; fold butter pieces with a whisk into melted chocolate until smooth. Once cooled, fold in whipped cream. Spread filling on half of the cookies, then top with remaining cookies to form sandwiches. Let set.

To decorate, melt chopped chocolate over a double boiler, let cool slightly, then glaze cookies. Allow to firm. Mix powdered sugar with lemon juice into a thick glaze; color with food coloring if desired and pipe fun faces with a small tip. Finish by adding sprinkles or sugar pearls as preferred.
