Lamb Skewers

Ingredients
- 2 Eggs
- 4 tbsp Lemon juice
- 3 tbsp tomato paste
- 90 g flour
- 100 g shallots
- Salt
- 2 tsp pepper
- 800 g lamb shoulder
- 0.5 bunch Lemon balm
- 150 g Sour cream
- Cayenne pepper
- 8 wooden skewers
- 6 tbsp peeled sesame seeds
Instructions

Whisk the eggs. Stir in 2 tbsp lemon juice, tomato paste and flour to make a marination.

Peel the shallots, finely chop them and mix into the marination. Season with salt and pepper.

Remove skin and tendons from lamb meat and cut into cubes of 2½×2½ cm.

Combine with the marination and let it rest for 3–4 hours.

Wash lemon balm and pat dry.

Pull leaves off stems, slice finely. Mix sour cream with remaining lemon juice and season with salt, pepper and cayenne pepper. Stir in lemon balm.

Preheat charcoal or gas grill (wait for embers). Cover the grill grate with aluminum foil and lightly oil it.

Place skewers on the foil and grill 5–10 minutes. Turn skewers and grill another 5–10 minutes.

Serve with lemon balm sauce.
