Ingredients
- 500 g cooked potatoes
- 3 tbsp olive oil
- 200 g Cherry tomatoes
- 5 sprigs thyme
- Salt
- Pepper (freshly ground)
- 2 lamb racklets about 450 g each, ready to cook

Preheat the oven to 180°C with fan and top heat.

Peel the potatoes and cut into pieces. In a hot ovenproof pan, brown them in 2 tbsp oil until golden. Wash, clean, and quarter the tomatoes. Rinse the thyme, shake dry, and mix into the potatoes. Remove from heat and season with salt and pepper.

Rinse the lamb, pat dry, and season with salt and pepper. In a hot pan, sear the lamb in the remaining oil until browned all around. Place on top of the vegetables and bake together for about 25 minutes until cooked through. Remove from oven, cut the lamb into pieces, and serve arranged over the vegetables.
