Lamb Chops with Spinach Salad and Herb Sauce

- 150 g spinach
- 150 g peas
- Salt
- 2 stalks dill
- 1 handful parsley
- 1 Garlic clove
- 1 untreated lemon
- 1 tbsp honey
- 6 tbsp Olive oil
- Pepper
- 8 lamb chops

Wash, dry, and roughly chop the spinach. Blanch the peas in salted water for 3-4 minutes, then cool and drain well. Rinse the dill and parsley, shake dry, and trim. Arrange the dill with the spinach and peas on plates. Place the parsley with the peeled garlic clove in a tall glass. Grate the lemon zest, squeeze its juice, and add both to the glass. Add honey and 4-5 tbsp oil, then blend finely. Season with salt and pepper.

Rinse the lamb chops, season with salt and pepper, and grill them in the remaining oil in a grill pan for 6-8 minutes on each side.
