Ingredients
- 300 g smoked salmon (piece)
- 300 g gravlax salmon (piece)
- 2 tbsp medium-hot mustard
- 1 tbsp liquid honey
- 2 tbsp white wine vinegar
- 1 splash Lemon juice
- 4 tbsp rapeseed oil
- 1 tbsp freshly chopped dill
- Salt
- pepper (from grinder)
- chili flakes
- 2 Spring Onions
- 250 g yogurt
- 150 g quark
- 0.5 untreated lemon (zest and juice)

Instructions

Cut the smoked salmon into strips and arrange on plates.

For the mustard sauce whisk mustard with honey, vinegar, 2-3 tbsp water and lemon juice. While stirring pour in oil. Fold in dill and season with salt and pepper. Garnish with chili flakes.

For the yogurt sauce wash, trim and slice spring onions into rings. Whisk yogurt with quark, lemon zest and juice until smooth. Fold in spring onions and season with salt and pepper.

Serve all in small bowls filled.
