Ingredients

  • 1.5 kg white asparagus
  • Salt
  • 4 lamb chops
  • Pepper (freshly ground)
  • 2 tbsp oil
  • 200 g butter
  • 2 egg yolks
  • lime juice
  • 2 tbsp sour cream yogurt
  • Salt
  • Pepper (freshly ground)
  • a pinch of sugar
  • 40 g chopped pistachios
  • 0.5 bunch chopped mint

Instructions

    Melt the butter for the sauce and skim off the foam. Whisk the egg yolks and lime juice in a bowl. Place the bowl over a hot water bath and beat the yolks until frothy. Gradually add the butter in a thin stream while continuously whisking. Fold in the yogurt and season with salt, pepper, and sugar. Stir in the pistachios and mint.

    Peel the asparagus and trim the ends. Cook the asparagus in boiling salted water for 15-18 minutes. Drain and let it rest.

    Season the lamb chops with salt and pepper. Fry them in hot oil on both sides for 6-8 minutes.
