Ingredients
- 4 lamb chops
- 1 Pomegranate (seeds)
- 2 tbsp oil
- 100 ml red wine
- 100 ml lamb stock
- 2 handfuls baby spinach
- 2 tbsp butter
- Cinnamon
- Cumin
- Salt
- ground pepper
- freshly grated nutmeg

Wash, trim and remove tough stems from the spinach.

Rinse the chops, pat dry, season with salt and pepper. Quickly sear both sides in hot oil. Remove and deglaze pan with red wine, reduce by half, add stock, reduce again. Stir in cinnamon, cumin, pomegranate seeds and return chops to the pan. Simmer at low heat for about 4-5 minutes until pink, turning once. Season sauce with salt and pepper.

Sauté spinach in hot butter until wilted. Season with salt and nutmeg. Plate by draining liquid from the pot onto plates, place lamb chops on top, pour sauce over and serve.
