Ingredients

  • 70 g pistachios
  • 70 g Walnuts
  • 2 sprigs sage
  • 400 g spinach
  • 1 onion
  • 2 tbsp Rapeseed oil
  • Salt
  • Pepper
  • 4 salmon fillets (125 g each)
  • 4 tsp mustard (30 g)

Instructions

    Chop pistachios and walnuts. Wash sage and spinach. Shake sage dry, pluck leaves, cut into fine strips; drain spinach well.

    Peel onion and finely dice it. Heat 1 tbsp oil in a pan. Sauté onion for 3 minutes over medium heat. Add spinach and cook until wilted over 5 minutes. Season with salt and pepper. Transfer to baking dish.

    Pat salmon fillets dry, season with salt and pepper, and sear in the remaining hot oil around all sides for 5 minutes over medium heat until golden brown. Place on spinach and brush with mustard. Sprinkle nuts and sage, then bake in a preheated oven using the grill function (highest setting) for about 5 minutes to finish.
