Lamb Chops with Mashed Potatoes

- 500 g Potatoes
- Salt
- Pepper (freshly ground)
- 60 g heavy cream
- 5 tbsp butter
- 8 sage leaves
- 1 Carrot
- 6 lamb chops (about 60 g each)
- 1 tbsp Olive Oil
- sage for garnish

Peel, wash, and cut the potatoes into small pieces. Boil in salted water covered for about 25 minutes until tender.

Finely chop the sage. Melt 3 tbsp butter, add the sage, lightly sauté, then remove from heat.

Drain the potatoes and let them steam off slightly. Add the remaining butter, cream, and sage butter; mash with a potato masher into a smooth purée. Season with salt and pepper, keep warm.

Meanwhile, peel the carrot and slice it lengthwise into thin ribbons using a vegetable peeler.

Heat oil in a skillet and sear each lamb chop for 1-2 minutes per side until browned; season with salt and pepper.

To serve, spread the mashed potatoes on a plate, arrange the lamb chops on top, and garnish with carrot ribbons and sage leaves.
