Ingredients

  • 200 g Feta Cheese
  • 80 g black olives (pitted)
  • 180 g cocktail tomatoes
  • 0.25 Cucumber
  • 1 small red onion
  • 150 g mixed salad greens (e.g., frisée, lamb's lettuce, red oak leaf)
  • 8 lamb chops
  • 2 tbsp olive oil
  • 1 tbsp currant jam
  • 100 g raspberries
  • 5 tbsp balsamic vinegar
  • Salt
  • pepper (ground)

Instructions

    Dice the feta for the salad. Halve the olives. Wash and halve the tomatoes. Wash, peel, and dice the cucumber. Peel, halve, and slice the onion into strips. Rinse, dry, and tear the salad greens. Combine all in a large bowl.

    Wash and pat the lamb chops dry. Sear them in hot oil in a skillet for 1-2 minutes per side, season with salt and pepper, wrap in foil, and let rest.

    Stir the currant jam into the pan, deglaze with vinegar and 2 tbsp water, add raspberries, heat briefly, then season with salt and pepper.

    For serving, mix the salad well, arrange on plates, place the lamb chops atop, and drizzle the raspberry dressing over them.
