Lamb Chops with Gruyère Filling and Grilled Vegetables

Ingredients
- 4 lamb chops (about 200 g each)
- 4 slices Gruyère cheese
- 1 tbsp chopped thyme
- 1 tbsp chopped rosemary
- Salt
- Pepper (freshly ground)
- 4 tbsp olive oil
- 1 Zucchini
- 1 eggplant
- 1 red bell pepper
- 1 yellow bell pepper
- 250 g green asparagus
- 1 bunch chives
- 4 Spring Onions
- 3 tbsp olive oil
- 2 tbsp white balsamic vinegar

Wash the lamb chops, pat dry and cut a slit lengthwise. Stuff each with a slice of Gruyère and some chopped herbs, then season outside with salt and pepper. Brush with a little oil and grill over high heat for 7-8 minutes per side.

Meanwhile wash zucchini and eggplant, halve them lengthwise and crosswise, then slice thinly. Wash peppers, halve, seed and cut into wide strips. Peel two-thirds of the asparagus. Place all vegetables on the grill, turning occasionally, for 3-4 minutes to finish grilling.

Wash chives and spring onions, shake dry and slice into narrow rings. Let the grilled veggies cool briefly, then mix with chives, spring onions, olive oil and vinegar; season with salt and pepper. Plate each stuffed lamb chop with a bit of salad and serve.
