Lamb Chops with Couscous

Ingredients
- 16 lamb chops
- 2 cloves garlic
- 0.5 lemon (juice)
- 5 tbsp olive oil
- Pepper (freshly ground)
- 350 ml vegetable broth
- Salt
- 350 g instant couscous
- 2 tsp freshly chopped rosemary
- 2 tbsp freshly chopped parsley

Rinse the lamb chops and pat them dry. Peel and finely chop the garlic. Mix with lemon juice, 3-4 tbsp olive oil, and pepper, then coat the chops. Cover and let marinate for about 20 minutes.

Bring the broth to a boil, season with salt and pepper, and sprinkle in the couscous. Let it simmer gently for about 5 minutes, remove from heat, and allow to stand while stirring occasionally for another 5 minutes until fluffy. Stir in the remaining oil and herbs, seasoning with salt and pepper as needed.

Meanwhile, take the lamb chops out of the marinades, season with salt, and grill them on a hot grill (or in a grill pan) for 4-5 minutes per side until golden brown.
