Ingredients
- 800 g boiled potatoes
- 8 matjes fillets
- 1 apple
- 2 onions
- 200 g bacon cubes
- 2 tbsp plant oil
- 2 tbsp flour
- 4 tbsp Sour cream
- chopped parsley

Wash the potatoes and steam them for about 30 minutes.

Rinse the matjes and pat dry. Wash the apple, quarter it, remove the core, and cut the quarters into strips. Peel the onions; slice one into rings, dice the other finely.

Fry the bacon in hot oil and add the diced onion. Cook until lightly golden brown, then dust with flour. Let it become slightly brown, deglaze with about 200 ml water. Reduce to a creamy consistency and season with pepper. Fold in parsley and arrange on plates with matjes fillets, apple strips, onion rings, and sour cream. Serve with boiled potatoes.
