  • 2 red onions
  • 1 Garlic clove
  • 3 Stalks Parsley
  • 6 sprigs chives
  • 1 dry slice of toast bread (or ½ old roll)
  • 300 g ground lamb
  • 1 egg
  • Salt
  • Pepper
  • 2 tbsp plant oil
  • 4 slices Gorgonzola (≈150 g)
  • 4 lettuce leaves (e.g., romaine)
  • 4 dark sesame buns

    Peel the red onions and garlic. Slice one onion into very thin strips and set aside. Finely chop the remaining onion and garlic. Wash and dry shake parsley and chives. Set a few parsley leaves aside for garnish, finely chop the rest with the chive stems. Remove the core from the toast bread and soak it in water. Mix the ground lamb with the chopped onion, garlic, egg, and finely cut herbs. Squeeze out excess moisture from the bread and knead into the meat mixture. Season the patty mixture well with salt and pepper and shape into 4 flat balls. Heat oil in a pan. Cook the patties for 10‑12 minutes over medium heat, turning once. Just before the end of cooking, place one slice of Gorgonzola on each burger. Cover the pan and let the cheese melt slightly. Wash and pat dry lettuce leaves. Cut sesame buns horizontally. On each lower bun half lay a lettuce leaf, a burger, and onion strips. Garnish with remaining parsley leaves and top with the upper bun half. Serve lamb burgers immediately.
