Salmon with Strawberries

The salmon with strawberries from Spoonsparrow is a fruity‑fresh delight for spring.

Ingredients

  • 600 g salmon fillet (ready‑to‑cook, skin on)
  • 2 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • 1 tbsp liquid honey
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp Olive Oil
  • 1 tbsp butter
  • 200 g strawberries
  • 0.5 cucumber
  • 1 Avocado
  • 1 Lime (juice)
  • 2 stalks Cilantro
  • 1 tbsp Olive Oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Wash the salmon, pat dry and cut into 4 equal pieces. Whisk together oil, vinegar, honey, salt and pepper; brush over salmon pieces. Cover and refrigerate for about 1 hour.

    Wash strawberries, trim and dice. Wash cucumber, halve lengthwise, remove seeds and dice. Quarter avocado, remove pit and peel; cube flesh. Combine strawberries, cucumber, avocado in a bowl with lime juice. Rinse cilantro leaves, shake dry and pluck. Mix into the fruit salad with oil, salt and pepper.

    Heat olive oil and butter in a hot pan. Remove salmon from marination and sear skin side for about 2 minutes. Flip, remove from heat and let rest 2–3 minutes. Plate and serve with strawberry salsa.
