Ingredients
- 600 g salmon trout fillet
- Salt
- Pepper
- 10 g butter (2 tsp)
- 2 Garlic cloves
- 2 anchovy fillets
- 130 g pistachio kernels
- 4 sprigs Parsley
- 2 tbsp Lime juice
- 400 ml fish stock
Instructions

Rinse the salmon trout fillet under cold water, pat dry, cut into 8 equal pieces, season with salt and pepper.

Lining four small baking dishes with butter. Place the fish pieces inside.

Peel the garlic and mince it together with the anchovy fillets. Chop the pistachios as well. Wash the parsley, pat dry, chop and mix with garlic, anchovies, pistachios and lime juice.

Pour the stock over the fish and spread the pistachio mixture on top. Bake in a preheated oven at 200 °C (convection 180 °C; gas: level 3) for about 20 minutes.
