Ingredients

  • butter (for the baking pan)
  • Breadcrumbs (for the baking pan)
  • 250 g softened butter (or margarine)
  • 200 g sugar
  • 1 Tbsp vanilla sugar
  • a pinch of salt
  • 0.5 tsp unprocessed lemon zest
  • 4 eggs
  • 400 g flour
  • 1 tsp Baking powder
  • 100 g cornstarch
  • 150 ml lactose-free milk (or oat milk, soy milk)
  • 30 g cocoa powder
  • 2 tbsp rum

Instructions

    Preheat the oven to 180°C with fan and top heat. Grease the cake pan with butter and dust it with breadcrumbs.

    Cream the butter and add sugar. Stir in vanilla sugar, salt, lemon zest, then gradually add eggs while mixing. Sift flour with baking powder and cornstarch, then alternately fold into the egg mixture with milk until a smooth, thick batter forms. Divide the batter; stir cocoa powder and rum into one half. Pour about half of the light batter into the pan, pour the chocolate batter on top, and cover with remaining light batter. Swirl around with a spoon in a spiral pattern.

    Bake in the preheated oven for about 50 minutes (test with a toothpick). Remove from oven, cool, then turn out onto a plate to cool completely.
