Almond Cake

Ingredients
- 125 g butter
- 100 g sugar
- 2 egg yolks
- 2 EL water
- 300 g flour
- 1 TL baking powder
- 250 g almond kernels
- 200 g powdered sugar
- 1 TL cinnamon
- 2 egg whites
- 2 EL lemon juice
- 1 egg (for brushing)
Instructions

Beat butter and sugar until fluffy, then stir in egg yolk and water.

Mix flour and baking powder and combine into a smooth dough.

Wrap the dough in foil and refrigerate for about 30 minutes.

Combine almonds and powdered sugar; whisk egg whites with lemon juice until frothy.

Blend all ingredients thoroughly to form a spreadable filling. If too dry, add one more egg white or 2 EL water.

Roll out about two-thirds of the dough and line a greased springform pan, shaping a 2-3 cm high rim.

Evenly spread the almond filling over the base.

Roll out the remaining dough thinly and cut into stars and strips to decorate as desired. Brush with beaten egg and bake in a preheated oven at 180°C (middle rack) for about 45–50 minutes until golden yellow. Remove, let cool slightly in the pan, then release and allow to cool completely.
