Ingredients
- 250 g peeled almond kernels
- 8 eggs
- 250 g powdered sugar
- zest of 1 lemon
- 1 tsp cinnamon
- 1 packet vanilla sugar
- breadcrumbs (for the pan)
- powdered sugar

Preheat oven to 180°C.

Separate the eggs. Finely grind the almonds. Whisk powdered sugar with the yolks until smooth. Add almonds, lemon zest, cinnamon and vanilla sugar and mix.

Beat egg whites very stiff and fold into the almond-yolk mixture.

Grease a 26 cm springform pan and line with breadcrumbs. Pour in the batter and bake for about 50 minutes.

Before serving dust with powdered sugar.
