Kratoffel Flatbread

Ingredients
- 200 g wheat flour
- 50 g semolina
- 200 ml water
- 20 g yeast
- 4 cooked new potatoes
- 2 onions
- 1 red bell pepper
- 2 tbsp oregano (chopped)
- olive oil
- Salt
- freshly ground pepper
- flour (for working)
Instructions

Knead a relatively soft yeasted dough from flour, semolina, crumbled yeast and lukewarm water. Cover and let rise in a warm place for about 2 hours. Then knead again on a floured surface and shape into 4 balls. Roll each ball into thin flatbreads.

Slice potatoes into thin rounds.

Peel onions and slice very thinly or shave them.

Wash, clean, halve, seed, remove the white skin of the bell pepper and dice it small.

Top the flatbreads with potato slices, onion and pepper, sprinkle oregano and drizzle olive oil. Season with salt and pepper and bake on a hot stone (pizza stone or in a preheated oven on a parchment‑lined tray at 240 °C fan‑forced) for about 2–4 minutes until golden brown.
